Aunt Rhonda’s Oatmeal Cake

1 cup quick cooking oats
1/2 cup shortening
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups boiling water
1 cup white sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1 cup chopped nuts

Add oats to boiling water and allow to stand for 20 minutes. Mix all ingredients.

Bake in a preheated 350°F oven for 55 minutes. Serve with sliced, steamed bananas in honey or maple syrup and whipped topping.
