Granny Clampett’s Dandelion Jelly!

1 qt. Dandelion flowers only (no greens)
1 qt. water
1 pkg. of Sure Jell (1 3/4 oz.)
1 tsp. lemon or orange extract
4 1/2 c. sugar

Boil Dandelion flowers in 1 quart of water for 3 minutes only. Drain off juice, gives about 3 cups. Add Sure Jell and lemon or orange extract; bring to boil. Add sugar and boil about 3 minutes. Remove from heat, skim off foam and ladle into hot jars. Seal.
